- 1,200g to 900g / 2lb courgettes, grated
- salt and freshly ground black pepper
- bunch spring onions, white part chopped, the green part discarded
- 2 to 4 tbsp chopped mint
- 2 to 4 tbsp chopped flatleaf parsley
- 3 free-range eggs
- 1 tbsp paprika
- 200g feta cheese
- 225g plain flour
- 1 to 2 tsp dried chilli flakes
- oil for frying
- Lay the courgette on a large plate and sprinkle with about 2 tbsp salt allow to stand for 2 or more hours.
- Place the grated courgette in a clean tea towel and squeeze out the water. Mix with the onions, mint, parsley, eggs, paprika, freshly ground black pepper and chilli flakes.
- Chop the feta into small cubes and add with the flour.
- Heat about 1 to 2 cm oil in a large frying pan.
- Carefully fry tablespoons of the mixture in the hot oil until golden. Turning once or twice. Remove with a slotted spoon and drain on kitchen towels.
