Courgette and Feta Fritters

  • 1,200g to 900g / 2lb courgettes, grated
  • salt and freshly ground black pepper
  • bunch spring onions, white part chopped, the green part discarded
  • 2 to 4 tbsp chopped mint
  • 2 to 4 tbsp chopped flatleaf parsley
  • 3 free-range eggs
  • 1 tbsp paprika
  • 200g feta cheese
  • 225g plain flour
  • 1 to 2 tsp dried chilli flakes
  • oil for frying


  • Lay the courgette on a large plate and sprinkle with about 2 tbsp salt allow to stand for 2 or more hours.
  • Place the grated courgette in a clean tea towel and squeeze out the water. Mix with the onions, mint, parsley, eggs, paprika, freshly ground black pepper and chilli flakes.
  • Chop the feta into small cubes and add with the flour.
  • Heat about 1 to 2 cm oil in a large frying pan.
  • Carefully fry tablespoons of the mixture in the hot oil until golden. Turning once or twice. Remove with a slotted spoon and drain on kitchen towels.
